Abstract
GAMBARAN PENERAPAN HYGIENE SANITASI MAKANAN PADA PROSES PENGOLAHAN HOME INDUSTRY ROTI FAJAR JAYA DI SUKOMORO KABUPATEN MAGETAN TAHUN 2025 XIV + 103 Halaman + 17 Tabel + 3 Gambar + 5 Lampiran Makanan merupakan salah satu kebutuhan pokok bagi setiap manusia. Mengonsumsi banyak makanan yang dikonsumsi manusia dapat membahayakan kesehatan, jadi penting untuk berhati-hati. Maka adanya penerapan hygiene sanitasi makanan pada setiap industri pengolahan makanan seperti industri rumah tangga guna terbebas dari pencemaran makanan. Penelitian ini merupakan studi deskriptif yang mengamati praktik pengolahan pangan. Penelitian ini menggunakan observasi dunia nyata berdasarkan Peraturan Menteri Kesehatan No. 2 Tahun 2023, yang berfokus pada kesehatan lingkungan. Studi ini mengkaji area pengolahan pangan, peralatan yang digunakan, orang yang terlibat, dan metode pengolahan pangan. Hasil dari penilaian hygiene sanitasi makanan pada tempat pengolahan makanan kategori memenuhi syarat dengann nilai 90,5%, pada peralatan pengolahan makanan kategori memenuhi syarat dengan nilai 80%, pada penjamah makanan kategori tidak memenuhi syarat dengan nilai 68%, pada proses pengolahan makanan kategori tidak memenuhi syarat dengan niai 40%. Disimpulkan secara keseluruhan peerapan menjaga kebersihan dan praktik aman di area pengolahan makanan dan mesin yang digunakan untuk memasak dalam kategori memenuhi syarat. Sedangkan pada penjamah makanan dan proses pengolahan makanan kategori tidak memenuhi syarat. Disarankan penjamah menggunakan pakaian kerja khusus serta APD yang lengkap dan tidak menggunakan aksesoris saat mengolah makanan. Many foods consumed by humans contain health hazards, therefore it is necessary to implement food sanitation hygiene in every food processing industry such as the household industry to be free from contamination. This research is a descriptive study, employing a field observation method. We're using an observation assessment form that follows the guidelines from Permenkes number 2 of 2023 regarding environmental health. The focus of our study is the food processing procedure. This encompasses various aspects such as food processing facilities, tools, the people handling food, and the methods used in food processing. The results of the food sanitation hygiene assessment at the food processing facility are in the qualified category with a value of 90.5%, at the food processing equipment the qualified category with a value of 80%, at the food handlers the unqualified category with a value of 68%, at the food processing process the unqualified category with a value of 40%. It is concluded that overall ensuring cleanliness and safety in the procedures of food preparation and handling facilities and food processing equipment is in the qualified category. While at the food handlers and food processing process the category is unqualified. It is recommended that handlers wear special work clothes and complete PPE and not use accessories when processing food. Keywords: Food sanitation hygiene, Home industry
