Abstract
Gambaran Hygiene Sanitasi Pangan Di Foodcourt Pujasera Pasar Baru Magetan Kabupaten Magetan Tahun 2025” 124 Halaman + 13 Tabel + 3 Gambar + 7 Lampiran Pangan adalah sesuatu yang amat krusial untuk manusia, karena pangan bukan harus gizi terpenuhi saja, juga aman tidak ada mikroorganisme juga bahan yang menyebabkan risiko kesehatan manusia. Jenis penelitian ini yaitu, penelitian deskriptif. Populasi yang diteliti yaitu Hygiene sanitasi pangan pada foodcourt pujasera pasar baru Magetan yang meliputi Lokasi, Area pelayanan Konsumen, Area persiapan masing masing TPP. Lokasi yang digunakan dalam penelitian ini ialah foodcourt pujasera pasar baru Magetan Kabupaten Magetan. Pengumpulan data dilaksanakan dengan pengamatan juga wawancara. Hasil penelitian menunjukkan Lokasi luar TPP dengan hasil presentase 8 0% termasuk dalam kategori berbasis resiko rendah, area pelayanan konsumen dengan hasil presentase 83% termasuk dalam kategori berbasis resiko rendah, area umum dengan hasil presentase 66,7% termasuk dalam kategori berbasis resiko sedang, area pemilihan dan penyimpanan bahan pangan dengan hasil presentase 60% termasuk dalam kategori berbasis resiko rendah, area persiapan dan pengolahan / pemasakan pangan dengan hasil presentase 86,67% termasuk dalam kategori berbasis resiko sedang, area peralatan dengan hasil presentase 7 3,33% termasuk dalam kategori berbasis resiko sedang, area penyajian pangan matang dengan hasil presentase 73,33% termasuk dalam kategori berbasis resiko sedang, area pengemasan pangan matang dengan hasil presentase 100% termasuk dalam kategori berbasis resiko rendah. Saran dari peneliti penjamah mencuci dan mengeringkan peralatan dengan lap yang lebih bersih lagi. mengutamakan penggunaan APD, menyediakan tempat sampah tertutup agar tidak menjadi sarana vektor dan Binatang pembawa penyakit. This type of research is descriptive in nature. The population studied was the food hygiene and sanitation of the food court at Pujasera Pasar Baru Magetan, which included the location, consumer service area, and preparation areas of each food handler (TPP). The study was conducted at the food court of Pujasera Pasar Baru Magetan, Magetan Regency. Data were collected through observation and interviews. The results of the study showed that the exterior area of the food handlers (TPP) scored 80%, categorized as low-risk; the consumer service area scored 83%, categorized as low-risk; the general area scored 66.7%, categorized as moderate-risk; the food selection and storage area scored 60%, categorized as low-risk; the food preparation and cooking area scored 86.67%, categorized as moderate-risk; the equipment area scored 73.33%, categorized as moderate-risk; the cooked food serving area scored 73.33%, categorized as moderate-risk; and the cooked food packaging area scored 100%, categorized as low-risk. The researcher suggests that food handlers should wash and dry equipment using cleaner cloths, prioritize the use of personal protective equipment (PPE), and provide covered trash bins to prevent them from becoming breeding places for vectors and disease-carrying animals.
