Abstract
“Gambaran Kondisi Sanitasi Tempat Pengelolaan Pangan Dan Angka Kuman Makanan Di Lapas” 147 halaman + 26 tabel + 3 gambar + 9 lampiran Kondisi sanitasi yang tidak memenuhi syarat dapat meningkatkan risiko pencemaran makanan serta menimbulkan kejadian penyakit yang berasal dari makanan. Penelitian ini bertujuan untuk mengetahui kondisi sanitasi tempat pengelolaan pangan dan angka kuman pada makanan. Jenis penelitian ini adalah deskriptif dengan pendekatan observasi lapangan menggunakan lembar observasi. Data hasil observasi yang telah terkumpul akan disajikan dalam bentuk tabel dan dianalisis secara deskriptif. Variabel pada penelitian ini adalah inspeksi area luar, dalam TPP , dan angka kuman makanan. Hasil penelitian kondisi sanitasi Tempat Pengelolaan Pangan pada area luar memperoleh skor 80 yang termasuk kategori risiko rendah, dan pada area dalam memperoleh skor 76 yang termasuk kategori risiko sedang. Sedangkan secara keseluruhan kondisi Tempat Pengelolaan Pangan memperoleh skor 76 yang termasuk kategori risiko sedang. Uji angka kuman makanan menunjukkan bahwa sampel tidak memenuhi syarat. Maka dari itu, seluruh aspek yang ada di TPP, terutama yang berkaitan dengan pengelolaan pangan, harus dijaga kebersihannya guna menjamin keamanan makanan, kesehatan warga binaan, serta menciptakan lingkungan yang layak dan higienis. Diperlukan penelitian lanjutan dengan periode observasi yang lebih panjang serta penambahan variabel lain, seperti uji kebersihan peralatan dan kualitas air. This study aimed to determine the sanitation conditions of the food processing area and the microbial count in the food. This research was descriptive in nature, using a field observation approach with an observation checklist. The data collected from the observations were presented in tables and analyzed descriptively. The variables in this study included inspection of the external and internal areas of the food processing site and microbial counts in the food. The results showed that the sanitation condition of the external area of the food processing site scored 80, which fell into the low-risk category, while the internal area scored 76, which fell into the moderate-risk category. Overall, the sanitation condition of the food processing site scored 76, indicating a moderate risk level. The microbial count test results showed that the food samples did not meet the required standards. Therefore, all aspects of the food processing site, especially those related to food handling, needed to be kept clean to ensure food safety, protect the health of the inmates, and create a proper and hygienic environment. Further research was needed with a longer observation period and the addition of other variables, such as equipment cleanliness and water quality testing. .
