Abstract
ANALISIS KUALITAS JAJANAN PADA PK5 DI TKK SANTA MARIA KECAMATAN MAGETAN KABUPATEN MAGETAN TAHUN 2025 xvii Halaman Permulaan + 77 Halaman Isi + 4 Tabel + 3 Gambar + 13 Lampiran Jajanan yang dijual oleh pedagang di lingkungan sekolah yang tidak memenuhi standar baku mutu akan menimbulkan penyakit. Penelitian ini bertujuan untuk mengetahui gambaran kualitas jajanan yang dijual oleh pedagang kaki lima di sekitar TKK Santa Maria Kecamatan Magetan Kabupaten Magetan Tahun 2025. Jenis penelitian ini adalah deskriptif yang mengambarkan kualitas makanan jajanan dari aspek fisik (organoleptik) meliputi warna, rasa, tekstur dan bau terhadap bakso. Aspek Kimia meliputi uji kandungan Methanil Yellow (Nugget Goreng), Boraks (Bakso), Rhodamine B (Sosis Bakar) dan Formalin (Telur Gulung, Pentol Goreng dan Batagor). Aspek mikrobiologi yaitu pada (Bakso, Nugget Goreng, Sosis Bakar, Pentol Goreng, Batagor dan Telur Gulung). Data yang diperoleh disusun dalam bentuk table dan disusun secara deskriptif. Hasil penelitian untuk fisik (organoleptik) pada jajanan Bakso warna menunjukkan bahwa bakso memiliki warna yang cukup cerah, agak segar. Aroma menujukkan bauk cukup sedap, aroma daging mulai terasa seimbang. Rasa menunjukkan bahwa bakso memiliki rasa cukup gurih, bumbu cukup terasa seimbang. Tekstur terasa kenyal sempurna, lembut merata dan tidak keras. Hasil pemeriksaan kimia menunjukkan bahwa seluruh sampel hasil makanan negatif dan hasil pemeriksaan mikrobiologi pada jajanan Telur Gulung, Sosis Bakar, Batagor dan Bakso menunjukkan Tidak Memenuhi Syarat dan pada jajanan Pentol Goreng dan Nugget menunjukkan hasil Memenuhi Syarat. Diperlukan pengawasan rutin serta edukasi kepada pedagang mengenai pentingnya higiene dan sanitasi pangan untuk melindungi sanitasi pangannya. This study aims to describe the quality of street foods sold by vendors around TKK Santa Maria, Magetan District, Magetan Regency in 2025. This research is a descriptive study that illustrates the quality of street foods based on physical (organoleptic) aspects, including color, taste, texture, and odor of meatballs. The chemical aspects include testing for Methanil Yellow (Fried Nugget), Borax (Meatballs), Rhodamine B (Grilled Sausage), and Formalin (Egg Rolls, Fried Pentol, and Batagor). The microbiological aspect was examined in Meatballs, Fried Nugget, Grilled Sausage, Fried Pentol, Batagor, and Egg Rolls. The data obtained were presented in tables and described descriptively. The organoleptic results for meatballs showed that the color was fairly bright and slightly fresh. The aroma was reasonably pleasant, with a balanced meat scent. The taste was moderately savory with well-balanced seasonings. The texture was perfectly chewy, evenly soft, and not hard. Chemical testing results showed that all food samples were negative. Microbiological testing results indicated that Egg Rolls, Grilled Sausage, Batagor, and Meatballs did not meet the standards, while Fried Pentol and Fried Nugget met the requirements.Regular monitoring and education for vendors regarding the importance of food hygiene and sanitation are needed to ensure food safety .
